Today Kelly is hosting a Show Us Your Life about favourite grilling recipes. I wanted to share my "recipe" for grilled beets which I "invented" last summer and which has become my favourite way to eat beets. And since it's our CSA (community shared agriculture) time of the year, we are getting a lot of beets! If you haven't tried beets this way before I highly recommend them.
I coated mine with about three tablespoons of olive oil and a bit of rosemary. You could really use whatever spices you want to. I like to keep it simple so a pinch (or two) of rosemary out of a bag it is :)
Here are the other vegetables we (and by "we" I mean Dave) also grilled last night. We had some new onions and some tomatoes and peppers and mushrooms. I just tossed them in olive oil and they went on the BBQ in our vegetable basket.
I wrapped the beets up in tinfoil to BBQ them. I find the tinfoil retains the heat better and they get done a little quicker.
Here's my nicely wrapped package of beets.
Dave BBQd them on the main rack at medium-high for 25 minutes. The other veggies he grilled the same way but for about 10 minutes.And then we ate. And ate. And ate. These pictures are from last night and we're having grilled beets again tonight because that's just how much
Alright...I'm not entirely sure I've EVER had a beet in any form, so I'm not sure what they really taste like...BUT, this does look like a delicious way to eat them!! I mean, I like pretty much anything (except mushrooms, YUCK) oiled up and grilled! Maybe if I see a beet in a store someday I'll give it a try!!

DeleteWhile I'm not usually a big beet fan, I think this sounds like the perfect way to cook them. I love grilled veggies!
