After This I Will Move On (I Promise!)

I just wanted to write one post completely dedicated to the fruit pizza I made for our Olympics Opening Ceremony party and then you will never hear about it again. At least, not until August 2016! :) After Janice asked me to bring dessert, I searched Pinterest and found this fruit pizza and wanted to try making it.


I would highly recommend it, even if you don't make it for the Olympics, because it was delicious. And pretty easy to make, despite the fact I had a helper who wanted to taste every single ingredient and lick the spoon!
I am notorious for not reading a recipe carefully enough, starting to make it, and realizing I am missing an ingredient. In this case I had neither the butter or the shortening the recipe called for so I just substituted margarine for both of them. It still seemed to turn out well.
This was the point at which I was certain the finished product would be no where near as tasty as this raw batter and it took extreme willpower not to just eat it all at this point!
I was pretty impressed with my pre-baked Olympic rings because this was the part I was most nervous about. As I may have mentioned before, I am not at all artistic.
I obviously should have been more worried about getting the crust off the original baking sheet without it breaking into a million pieces because I was not so great at that part. Ha!
Thankfully, the cream cheese/whipped cream/icing sugar mixture, besides tasting a-m-a-z-i-n-g, covers a multitude of errors, including holding broken pieces together.
Washing, cutting, and arranging the fruit was time consuming but worth it in the end. And yes, it was really yummy. So go, make, and enjoy this deliciousness for yourself. You can thank me later.

I may, or may not, have worked the extra crust batter into a heart so I can make another fruit pizza for a certain holiday supper we are having later this week. I can't wait!
And this picture of a chocolate-chinned, upside-down-sunglasses-wearing Rachel is just an added bonus and has nothing to do with this post. It just made me laugh. This girl is just full of personality!

  2. YUM!!!!!!!!!!!!!!!!!!! I make a similar fruit pizza for showers and such, but never with a chocolate crust...that sounds amazing!!!

    1. Thank you so much for stopping by and leaving a comment! I only thought to make this because our friends invited us to their house to watch the opening ceremonies and I offered to bring dessert. Then I thought, "Pinterest might have something fun!" and they did :)
