Not Just A Mom: Quick Family Dinner

This is going to be a boring post with only one picture but it fits with the prompt of "quick"! I'm linking up with the "Not Just A Mom" bloggers to talk about quick family dinners.

 

Funnily enough, when we need a quick family dinner, it's almost always Dave who does the cooking -- grilled cheese and tomato soup, scrambled eggs on toast, pancakes and a salad, tuna melts, etc. Although lately it's been Rachel who is our pancake maker, but then it isn't quite as quick :)

One family favourite we often eat for a quick dinner is something a friend of mine in university invented and it's called Tomato Soup Pasta. We make it probably once a month, at least, especially in the winter.

Boil enough pasta for your family. We usually use our biggest pot which isn't the Dutch oven. Drain the pasta and leave it in the colander. Turn the burner to medium-low, open one can of tomato soup and dump it in a pot -- you can use the same one the pasta boiled in if it's clean enough. Add about 1/3 can of milk, basically enough to rinse the rest of the soup out of the can. Add about 1/2 cup each of sour cream and mayonnaise. Add 1/2t - 1 teaspoon each of basil, oregano, and thyme. Stir this all together until the sauce is heated through. Then dump the pasta back in and stir it all together until the pasta is heated and covered with sauce. Serve with shredded cheddar (if you're feeling fancy) or Parmesan cheese from the container (if you're not).

This whole dinner takes about twenty minutes to make (maybe) and is the perfect comfort food for a cold day, especially. We're getting to the point where we might need to start making more pasta and using two cans of soup and doubling everything else because we eat through this in about one helping each. And please remember, all measurements are approximate. Dave hates making this recipe because I know how much of everything looks like "enough" and it's not an exact science!

And I have no pictures of this recipe because we often make it at the last minute or on a night where we need a quick dinner in between activities. I'll try and remember to take a picture next time we make it and add it to this post.

  1. That sounds good! I invented something similar that I called tuna pasta, where I combined tuna and mayo with my pasta. It was good.

  3. I am so intrigued by this dinner but I don't know if I could make it - while I love mayo in a sandwich or on fries, I'm revolted by it in a pasta dish. How about this, when you come to Philly for a Phillies game, I'll buy the ingredients and you can make it for us. :)
