Currently: May 2021

It's time for another "Currently..." post with Anne at in residence. Make sure you check out the other blogs in the link up here. Read on to see what I'm consuming, exploring, getting, hoping, and seeing this month. Also, I didn't know what to do for these prompts and then yesterday morning, Dave and I were both awake, drinking coffee, before the kids were awake, and we came up with these answers together. I would currently LOVE more mornings like that please :)

This is not the most lovely picture but we're currently consuming a lot of guacamole. A few weeks ago a friend of ours got extra avocados in her grocery pickup order and gave them to us. Dave and Rachel made guacamole and now we can't get enough. This is from the batch that they made on Sunday. YYYUUUMMMM!!!

[exploring]

We haven't done it yet, but we're going to be exploring the memorial rock garden at our local university. Let me explain: A few weeks ago a friend came up with an Amazing Race that took place on our university campus. We could pick up the kit at her house and choose when to do it. It was a super fun way to spend an afternoon. One of the stops was this memorial rock garden with over seventy different specimens of rocks from all over North America. The oldest type of rock is over 4 billion years old.

Anyways, we were hoping to get back to just the rock garden this past weekend but it was pretty rainy so we're hoping to get there this weekend instead.

Clearly I didn't take any pictures of the actual rocks. Ooops.

I'm getting tired of cold lunches. I am so happy to be able to work but microwaves are off limits so I'm back to cold lunches. I've been eating a lot of cheese sandwiches. Yesterday I had guacamole and leftover salad for lunch but I need some new ideas. If you have any brilliant, vegetarian, cold lunch ideas, please let me know :)

This past weekend we finally got rid of our sandbox. It was Rachel's first birthday present and had lived under our play structure for almost seven years and the kids hadn't used it in years. So we gave it to our across the street neighbour.

After seven years, there was quite the indentation in the grass, so we filled it in with topsoil and planted some old grass seed we had in the garage. I am really hoping it will sprout and fill in nicely. We shall see...

[seeing]

Even though I have allergies, I still love seeing all the trees in bloom with their spring beauty. I took (way too many?!?!) pictures of the sun shining through the trees on Saturday night because I just can't stop!

  4. My best lunch tip would be crispy fried tofu on a bed of greens with sesame dressing! Whilst it's cold, it's a good change from boring sandwiches!

  5. I almost always have cold lunches-- hummus and pita chips, pasta salad, salads with a variety of cold meats & fruits on them, sandwiches, yogurt/fruit/granola, even cereal and milk in a pinch.

  6. We just put down some grass seed, too. And after the spring rain we've had, I'm really hoping to see it sprout! Looks like a fertile spot that sandbox left, for sure! It's kind of nice to move those things out, once no one's using them anymore, isn't it?!

  8. That is a bummer you can't use the microwave at work. I would get tired of cold lunches too, but maybe you can find some new-ish ideas via Pinterest or something!

  9. For lunch how about a black bean salad with tortilla chips --- just mix black beans, corn, onion, red bell pepper, jalapeno, cilantro & lime juice. Or cold noodles sesame noodles with some raw veggies mixed in.

  10. Enjoy spring and the warmer weather! I used to have cold lunches all year round if I worked at the office - yoghurts and fruit or salad.

  11. I love spring despite my allergies as well! I have learned this past year though that wearing my mask outside actually helps with the allergies though. LOL.

    That rock garden sounds neat!

  12. I'm loving trees in bloom lately too! Though lucky that they don't make me sneeze ;-) And I think one can never have too much guacamole in life. But when you get bored of that, there are lots of great quinoa salads out there that can be good served cold - I love ones with greek dressing, feta, tomatoes, and cucumbers.

  13. Yes, my allergies have been causing me some issues lately. I seem to be immune to most allergy meds which is annoying.

  14. This is not the healthiest lunch, but my kids have become obsessed with mini waffle sandwiches, with nutella & strawberry on the inside. Again, not the healthiest, but they LOVE it. Nutella makes everything more fun. :)

  15. It's hard to get a good picture of guacamole. You blink and it has begun to turn that less photogenic olive drab color. But it sure is good!!
    Nice that you passed along the sandbox to the neighbor. I bet grass will fill in the indentation in no time where it sat so long.
    I remember that you've done this kind of Amazing Race before. Sounds like such fun.
